Here are the directions to make Browned Butter Mashed Cauliflower...

Directions


  1. Add chopped cauliflower into a food processor and process until smooth puree.
  2. Place a nonstick pan over medium heat and add 1/4 of butter.
  3. Add chopped onions and cook over medium-low heat for 12-15 minutes or until golden brown, stirring occasionally.
  4. Transfer onions to a bowl and set aside.
  5. Return pan to medium-low heat and add pureed cauliflower and heavy cream.
  6. Increase heat to medium and stir to combine.
  7. Add shredded cheddar cheese and cooked onions to pan.
  8. Season with salt and pepper to taste.
  9. Continue to cook until the cheese starts to melt, stirring constantly.
  10. Place a small nonstick pan over medium heat and melt the remaining butter until amber-coloured is formed.
  11. Pour butter over mashed cauliflower.
  12. Garnish with fresh parsley.
