- 1 head - Cauliflower, large
- 4 tbsp - Butter
- 4 tbsp - Heavy Whipping Cream
- 1/2 tsp - Oregano
- 1/2 tsp, ground - Basil
- to taste - Black Pepper
- 1 cup - Cheddar Cheese, shredded
- 1 cup - Mozzarella Cheese, shredded
- 4 tbsp - Parsley

Here are the directions to make Cauliflower Mac and Cheese...
- Preheat the oven to 400°F.
- Add cauliflower to a pot and pour in enough water to cover. Bring to a boil and cook for 10 minutes or until tender crisp.
- When done, remove from the heat and drain.
- Add butter to the pot along with the drained cauliflower.
- Pour in heavy cream and sprinkle with oregano, basil, and pepper.
- Add mozzarella and half of the shredded cheddar.
- Mix well and continue to cook until the cheese has completely melted.
- Transfer the mixture to a baking dish and top with the remaining cheddar.
- Bake for 7 minutes or until cheese is melted.
- Garnish with chopped parsley.
