Pie Crust

  • 1 cup - Almond Flour
  • 1/4 cup - Flaxseed, ground
  • 1/3 cup - Coconut Flour
  • 1 tbsp - Psyllium Husk
  • 1 tsp - Baking Powder
  • 1/2 tsp - Salt
  • 1 tbsp - Olive Oil
  • 1 - Egg
  • 1/4 cup - Water, cold

Filling

  • 10 oz - Mushrooms, chopped
  • 4 - Egg
  • 7 oz - Parmesan Cheese
  • to taste - Salt and Pepper
  • as needed - Oil Cooking Spray

Directions


Crust

  1. In a bowl, mix together almond flour, flaxseeds, coconut flour, psyllium husk, baking powder and salt.
  2. Pour oil and water to bowl.
  3. Using a hand mixer, mix until fully incorporated.
  4. Mix in egg and continue to beat until a slightly sticky dough has been formed.
  5. Spray a small baking pan with oil.
  6. Press dough into prepared pan and refrigerate for 30 minutes.

Filling

  1. Place a pan over medium heat and spray with cooking oil.
  2. Add sliced mushrooms and cook for 15 minutes or until most of the liquid is evaporated, stirring occasionally.
  3. Remove mushrooms from heat and transfer into a bowl.
  4. Add parmesan cheese, heavy cream and eggs.
  5. Season with salt and pepper to taste.
  6. Pour the mixture over pie crust and bake in the oven for 30 minutes at 350F.
  7. Cool for 15 minutes before serving.
