Directions
- In a bowl, add eggs, cream cheese, swerve sweetener and cinnamon powder.
- Using a hand mixer on medium speed, beat until fully incorporated. Set aside.
- In another bowl, beat together vanilla filling ingredients.
- Place a nonstick pan over medium-high heat and spray pan with cooking oil.
- Pour batter, tilting and swirling pan until the batter evenly coats the bottom of the pan.
- Cook for 1-2 minutes or until golden brown and remove from pan.
- Spread vanilla filling over crepe and roll.
- Optional to sprinkle swerve sweetener on top.
