Pancake
- In a bowl, whisk together egg, cottage cheese and psyllium husk powder.
- Place a nonstick pan over medium-low heat and spray with cooking oil.
- Pour egg mixture and cook for 1-2 minutes on each side or until set.
- Remove from pan and set aside.
- Toppings
- Return pan over medium heat and spray with cooking oil.
- Fry egg to desired liking. Optional to cook egg in a pancake ring for a nice round shape.
- Assemble sandwich with ham, herbs, gouda and cheddar cheese, tomato, fried egg and red onion.
